Green Friday: Apple Pastries

On November 24th, we celebrated Green Friday, a sustainable alternative to Black Friday! A number of Atmos members helped harvest the young trees which will be replanted somewhere else by other volunteers. In the break from harvesting trees, the members enjoyed some vegan apple pastries (appelflappen in Dutch) and hot chocolate! The recipe for these apple pastries can be found in this blog.

Recipe for 10 pastries.

Ingredients:

  • Puff pastry (pack of 10 sheets, vegan packs use margerine instead of butter)
  • 2 or 3 apples depending on the size (pick apples that are slightly sour)
  • 1 piece of fresh ginger
  • 2 tea spoons of cinnamon
  • 5 table spoons of table sugar
  • Some plant based milk (almond/soy/oat) to finish
  • Cranberries/raisins/nuts (if so desired)

Preparation: 

  • Thaw out the puff pastry.
  • Wash, peel and dice the apples.
  • Add the apples to a bowl along with the sugar, cinnamon, grated ginger and any other additions you want to add.
  • Add the filling to the centre of a sheet of puff pastry, leave the edges bare.
  • Fold the dough closed, crimping the edges with a fork.
  • Brush the top with vegan milk and sprinkle with sugar.
  • Bake in a preheated oven at 180°C for 20 minutes.
