Open Office Hours: Pumpkin Spice Cake
For the open office hours, the board made vegan pumpkin spice cake to hand out to all the members. In this blog you can find the recipe for this pumpkin cake!
Ingredients:
Cake:
- 500 gr (bottle) Pumkin
- 225 gr wheat flour
- 80 gr sugar
- 20 gr baking powder
- 4 tsp gingerbread ('speculaas') spices
- 2 tsp cinnamon (one tsp more for extra taste)
- 120 ml almond milk (try oat or soya milk to make it nut-free)
- 60 ml vegetable oil
Glaze:
- 50 g icing sugar
- a few drops of almond milk
Preparation:
- Preheat the oven to 175 degrees.
- Cut the pumpkin into cubes and cook until completely soft. Puree it completely smooth together with almond milk. Then add the oil.
- Now mix all the dry ingredients and mix this with the wet mixture.
- Grease the baking tin well and add the batter.
- Bake the cake for about 45 minutes or until a skewer inserted into the cake comes out clean.
- Finish by making a frosting with the powdered sugar and some drops of almond milk and frost when the cake has cooled down.
